Garlicky Lemon Chickpea Pasta

Ingredients

  • 1 box chickpea pasta

  • 5-7 garlic cloves; thinly sliced

  • 1 lemon; juiced and zested

  • 1/2 cup parmesan cheese; plus more for serving if desired

  • 2-3 tbs olive oil

  • 1 c reserved pasta waster

  • Crushed red pepper; to taste

  • Salt and pepper; to taste

  • Parsley; for garnish


Method

  • Cook pasta as instructed on the box; reserve 1 cup of water once cooked; set aside

  • Heat a large pan on low-med; add olive oil, garlic, crushed red pepper; sauté until you start to smell the garlic

  • Add cooked pasta and 1/2 cup reserved pasta water, or as needed; gently mix

  • Add parmesan, lemon juice and zest; gently mix

  • Let simmer for 1-2 minutes; add more pasta water if it looks dry or begins to stick

  • Flavor with salt and pepper to taste

  • Garnish with extra parmesan, fresh parsley, lemon zest and enjoy!
