Garlicky Lemon Chickpea Pasta
Ingredients
1 box chickpea pasta
5-7 garlic cloves; thinly sliced
1 lemon; juiced and zested
1/2 cup parmesan cheese; plus more for serving if desired
2-3 tbs olive oil
1 c reserved pasta waster
Crushed red pepper; to taste
Salt and pepper; to taste
Parsley; for garnish
Method
Cook pasta as instructed on the box; reserve 1 cup of water once cooked; set aside
Heat a large pan on low-med; add olive oil, garlic, crushed red pepper; sauté until you start to smell the garlic
Add cooked pasta and 1/2 cup reserved pasta water, or as needed; gently mix
Add parmesan, lemon juice and zest; gently mix
Let simmer for 1-2 minutes; add more pasta water if it looks dry or begins to stick
Flavor with salt and pepper to taste
Garnish with extra parmesan, fresh parsley, lemon zest and enjoy!
