Vibrant Beet Hummus

I mean who doesn’t love anything pink? Beets add a vibrant, beautiful color and taste to a classic hummus recipe. Not only is the color cute, but beets offer nutrients like folate, vitamin C, phosphorus, magnesium, and antioxidants! This beet hummus is a perfect snack with pita bread, flax seed crackers, veggies, or even can be used as a spread on a sandwich or wrap! Ingredients

  • 2 beets; pre-cooked or boiled and peeled

  • 1 15 oz can chickpeas; drained and rinsed

  • 1/4 cup olive oil

  • 3 tbs tahini

  • 3 garlic cloves

  • 1/2 - 1 whole lemon; juiced and zested

  • 1 tsp cumin

  • Salt and pepper to taste


Method

  • Boil your beets until soft and peel once they are cooled (if you are not using pre-cooked ones)

  • Drain and rinse chickpeas thoroughly

  • Add all ingredients to a food processor or blender and mix until you get a creamy texture

  • If texture is too thick, add more lemon juice or water

  • Top with fresh herbs and serve with pita bread, crackers or veggies

  • Enjoy!
